AMAZING WILD RICE DRESSING





Makes 6 to 8 servings





Ingredients -





* 4 ounces thinly sliced pancetta, chopped*


* 1 cup finely diced white onion


* 3/4 cup finely diced celery


* 2 garlic cloves, minced


* 4 cups cornbread crumbs


* 2 cups sliced white button mushrooms


* 1 1/2 cups cooked wild rice


* 1 cup fresh or dried wild mushrooms, chopped**


* 1 tablespoon dry mustard


* 1 tablespoon fresh thyme leaves


* 1/2 teaspoon salt


* 1/2 teaspoon freshly ground pepper


* 2 large eggs, lightly beaten


* 2 1/4 cups mushroom broth or vegetable broth





Preparation -





1. Preheat oven to 400掳. Cook chopped pancetta in a large saute pan over medium-high heat 7 minutes or until crisp (most of fat is rendered). Reduce heat to medium. Add onion, celery, and garlic, and saut茅 8 minutes or until vegetables begin to soften; transfer to a large mixing bowl, and let cool 10 minutes. Stir in remaining ingredients.





2. Spoon mixture into a lightly greased 9-inch square baking pan. Bake, covered with foil, at 400掳 for 20 minutes. Uncover, and bake 25 to 30 minutes or until browned. Let stand 10 minutes before serving.





*If pancetta (Italian bacon that's cured with salt and spices but not smoked) is unavailable, substitute uncured bacon or ham. You can also use olive oil or butter, but they slightly alter the flavor.





**Fantastic fresh wild mushrooms have become much easier to get. But if they're unavailable, try dried mushrooms for great flavor. The liquid they produce also tastes terrific and can be used for broth, soups, and sauces. (If using dried mushrooms, rehydrate in 2 1/2 cups warm water; strain and reserve liquid to use as broth. Chop after rehydrating.)

* 1 1/2 cups water


* 1/3 cup chopped dried figs


* 1 1/2 tablespoons pine nuts, toasted


* 1/4 teaspoon salt











Preparation





Preheat oven to 375掳.





Heat a nonstick saucepan over medium-high heat. Coat pan with oil. Add onion to pan; saut茅 4 minutes. Add rice and garlic to pan; saut茅 1 minute. Add water to pan; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until rice is almost tender. Stir in figs, nuts, and 1/4 teaspoon salt.
Look up Creole Oyster stuffing! My mom is Creole and she made it every year, now I just can't make any other kind... the whole family looks forward to it.
