I mix spinach and ricotta. Some salt, pepper, and a dash of nutmeg are wonderful with that combination.Anyone have any simple pasta stuffing recipes?
One of my tried and true ravioli fillings I use frequently is as follows: I take a container of ricotta cheese, about 8 oz or so, add about two cups of shredded mozzarella, and a half cup of cottage cheese, with salt and pepper to taste. It's always a hit, and it also works well in lasagna, or stuffed shells.
2 eight oz containers ricotta cheese
2 eggs
1 cup shredded mozzarella cheese
1/3 cup chopped fresh parsley
1/4 tsp salt
mix all ingredients well and stuff into manicotti, shells, or in between lasagna sheets
The first thing that popped to mind was a usual spinach/ricotta mixture, but that's boring. Then I was thinking minced crab/shrimp/lobster, ricotta, garlic, lemon zest, chives. I might actually try that idea this weekend.
